Head Chef

In the Laboratorio we produce, in a completely traditional way, our own fresh pasta which is served in the restaurants by professional and close-knit teams. To guarantee the quality in all these restaurants, we are looking for a Head Chef who knows how to motivate others, has an eye for detail and has the ambition to deliver quality every day.

The Head Chef works under the direct leadership of the Executive Chef and managing board and is mainly responsible for ensuring the quality of the working processes and the culinary level of the Spaghetteria. He/she rotates between the different restaurants, supervises the activities of the chefs and acts as the eyes and ears of the Executive Chef. The Head Chef must optimize the work processes and motivate other chefs to ensure that quality is delivered every day. In addition, he/she is jointly responsible for the recruitment, selection and training of personnel.

Activities

  • Cooperate in all restaurants (Amsterdam, Utrecht, Rotterdam)
  • Responsible for a consistent quality of work and a standard culinary level
  • Recruitment, selection and training of personnel
  • Advising the management on the basis of trends and developments
  • Implementing and/or communicating changes in work processes, etc.
  • Create and publish work and cleaning schedules
  • Participate in meetings and conduct assessment interviews with chefs

Pasta Maker

Spaghetteria Laboratorio acts as the heart of the company. From here we produce and distribute all types of pasta (including various raviolis) that we sell in the restaurants and, since recently, also offer in local shops. Completely according to tradition, we work with two types of organic flour from small-scale producers in Tuscany and Umbria and we only use fresh free-range eggs. Throughout the day, the different types of pasta pass through the hands of our own artigiani. With one goal: to make the perfect, fresh pasta.

In addition to the pasta production, we are also setting up a central kitchen for the production of our fish and meat ragouts and our famous tomato sauce. With the central kitchen we want to guarantee a uniform quality standard in all restaurants. The continuity of the products from the Laboratorio is therefore essential.

Do you have an enormous passion for quality food and are you technically inclined or do you have experience in working with large production machines, then we have an interesting vacancy for you.

Activities

  • Participate in the production of the above products
  • Ensure that the entire production line is according to the HACCP regulations
  • Timely identification of deviations
  • Drawing up inspection reports
  • Participate in work meetings where you inform colleagues and manager about the test results

Profile

  • Passion for food in combination with industrial production
  • Knowledge of machinery
  • An eye for perfection
  • Knowledge of HACCP guidelines
  • Team player > Skilled in physical work
  • English speaking and writing. Italian and Dutch are a plus
  • At least 2 years of experience in the food industry
